The Best-Ever Paleo Brownies!

I was craving chocolate and wanted to make some goodies to leave at my friend’s home for letting me stay there while she was away, and who doesn’t like brownies?! I’ve always made an avocado based Paleo brownie in the past, but didn’t have any avos on hand, and thought it was about time I experimented with a new Paleo brownie recipe. This one is so simple, and the brownies just melt in your mouth! I am definitely a lover of fudgy gooey brownies and that’s exactly what you get with this recipe. But be forewarned–they are highly addicting! You may want to make these when you have house guests or to bring to work. They are grain free and have no refined sugar, but they are still brownies, so you many want to save yourself from eating the entire pan. Don’t say I didn’t warn you! The Best-Ever Paleo Brownies (Adapted from The Sweet Tooth Life) (Difficulty-Easy; Serves 12) ⅓ c semi-sweet chocolate chips ⅓ c organic grass-fed butter, or coconut oil 2 Tbsp honey 3 organic cage-free eggs 1 tsp vanilla 1/2 c coconut sugar ½ c almond meal 1 Tbsp organic coconut flour ¾ c unsweetened cocoa powder, sifted  ¼ tsp baking soda  ½ tsp sea salt Preheat the oven to 325°F. Lightly grease an 8x8 baking, or a 6 cup glass Pyrex dish, which is what I used. I found this size made for thicker fudgy brownies, which is my preference. It was the perfect proportions to cut 12 squares.  Melt the chocolate chips and butter (or coconut oil) together, either in a microwave safe dish or in a small saucepan over the stovetop. In a medium bowl combine the coconut sugar, almond meal, coconut flour, sifted cocoa powder, baking soda, and salt. Whisk until the mixture is thoroughly combined and has no lumps. Using a spatula fold in the melted chocolate and butter mixture, along with the honey and vanilla. The batter should form a thick fudgy paste. Using a whisk, mix the eggs into the batter until smooth. Scrape the brownie batter into the prepared pan, and smooth into an even layer with a wet spatula. Bake for 25–30 minutes or until toothpick inserted comes out clean.
